CARROT-MOONG DAL CURRY

DESCRIPTION:

Tastes good with rice, roti and can even as a snack.

INGREDIENTS:

1/2 kg-Carrots
Salt-To taste
1/2 cup-Moong dal
3 glasses-Water
2 tsp- Oil
1 tsp-Mustard seeds
1 tsp-Cumin seeds
4-Green chilies
1-Red dried chili
1 pod-Curry leaves
2-3 cloves-Garlic
1/2 tsp-Red chili Powder
1/2 Bunch-Coriander leaves

PROCEDURE:

  • Peel and chop carrots into medium slices. Chop green chilies into small slices and keep them aside.
  • Take those carrot slices into a vessel. Boil them with water and salt. Remove the water using a strainer.
  • Boil moong dal separately for few minutes as it won't take much time to boil.
  • Now, heat oil in a frying pan. Add cumin seeds, mustard seeds, red dried chili pieces, curry leaves, green chili slices and garlic cloves. 
  • Let them pop up and add boiled carrot slices. Mix it well.
  • After 5 min add boiled moong dal, salt, red chili powder and mix it.
  • After 3-5 min mix the curry well and put off the flame.
  • Garnish it with coriander leaves.
  • Serve it with rice, roti. 

SUGGESTIONS:

  • Turmeric powder can be added for color. Moong dal must not to be so soft while boiling. Cabbage can be used instead of carrot
